Hands up if you love American Pancakes but are too lazy to make them!🙋🏼♀️
I chose this recipe for today’s segment on @bbcoxford with @itsmeadamball after I saw it in @nadiyajhussain new cookbook ‘Time to Eat’. It’s such an easy way to make American Pancakes without the faff!
I’ve edited it slightly to make a plain version because my family are all very individual with our pancake toppings! (That’s code for very picky!)🥞
If you’re looking for a lazy pancake breakfast for a crowd, then here’s how you can give it a go...
Pancake Traybake
Serves 5
250g plain flour
1 tsp baking powder
1/2 tsp salt
3 tbsp caster sugar
170mls whole milk
2 medium eggs
2 tbsp vegetable oil
Icing sugar
Put the flour, baking powder, salt & sugar into a bowl and whisk.
Add the milk, eggs and oil and whisk until you have a thick batter.
Oil a brownie tin and pour in your batter mixture.
Bake in the oven at 160 degrees, for 10-15 minutes or until the surface is shiny and there’s no wobble.
Dust with icing sugar, cut into squares and serve with your favourite pancake toppings.
Apparently you can freeze it to use at a later date but there wasn’t any left in my household 🤷♀️
