American Pancakes - Without the 'Faff'

Hands up if you love American Pancakes but are too lazy to make them!🙋🏼‍♀️⁣

I chose this recipe for today’s segment on @bbcoxford with @itsmeadamball after I saw it in @nadiyajhussain new cookbook ‘Time to Eat’. It’s such an easy way to make American Pancakes without the faff! ⁣

I’ve edited it slightly to make a plain version because my family are all very individual with our pancake toppings! (That’s code for very picky!)🥞

If you’re looking for a lazy pancake breakfast for a crowd, then here’s how you can give it a go...⁣

Pancake Traybake ⁣

Serves 5 ⁣

250g plain flour⁣

1 tsp baking powder⁣

1/2 tsp salt⁣

3 tbsp caster sugar⁣

170mls whole milk⁣

2 medium eggs⁣

2 tbsp vegetable oil⁣

Icing sugar ⁣

Put the flour, baking powder, salt & sugar into a bowl and whisk.⁣

Add the milk, eggs and oil and whisk until you have a thick batter.⁣

Oil a brownie tin and pour in your batter mixture.⁣

Bake in the oven at 160 degrees, for 10-15 minutes or until the surface is shiny and there’s no wobble. ⁣

Dust with icing sugar, cut into squares and serve with your favourite pancake toppings. ⁣

Apparently you can freeze it to use at a later date but there wasn’t any left in my household 🤷‍♀️⁣
