Asparagus Linguine

If you listened to Adam Ball’s drive time radio show on BBC Radio Oxford today you’ll have heard me talking about this delicious Asparagus Linguine recipe.

Asparagus is currently in season so you can get a variety of colours and shapes at the moment. This recipe is about as simple as it gets, a total winner in my eyes and literally takes 15 minutes to make!

Asparagus Linguine

Ingredients – Serves 4⁣ 300g Linguine⁣ 300g Asparagus ⁣ 4 cloves of garlic (crushed)⁣ 2 tsp dried chilli flakes⁣ Olive oil⁣ 1 knob of butter⁣ 30g of grated hard cheese⁣ Lemon zest ⁣ Get pasta onto boil then start the prep…⁣ Prep asparagus by snapping them at their natural breaking point, then slice into 3cm chunks.⁣ Using a wide pan, add oil, butter, chilli & garlic. Fry for 1-2 minutes or until garlic is sizzling. ⁣ Add asparagus and fry for another 1-2 mins then add a few spoonfuls of pasta water. ⁣ Simmer for 2 mins, then add the pasta and a bit more pasta water.⁣ Turn heat off and add grated cheese, mix until you see a lovely creamy sauce develop. ⁣ Season & grate over the lemon zest. ⁣

If you’re keen to include meat then I’d recommend adding some chopped bacon after the garlic and chilli. Best enjoyed with wine & sunshine! Love & food,
