The perfect summer salad! Another quick and easy meal for my foodie feature on BBC Radio Oxford. I chose this gorgeous recipe which uses my favourite ingredient…cheese! It’s just so good I think you might just eat the whole thing!
Baked feta with chilli jam Serves 2-4 Ingreidents: Olive Oil Block of feta 2 tablespoons of Chilli jam Basil Lettuce Avocado Red Onion Tomatoes Red wine vinegar Orzo pasta Oil a small baking dish and put the feta block on top. Spread the chilli jam over the feta and then top with a drizzle of olive oil. Put it in the oven at 180 for 15-20 minutes. While the feta is cooking, boil the orzo. Prep your salad, dress with olive oil & red wine vinegar and scatter your orzo over the salad. Get your chilli feta out of the oven which should now be bubbling and delicious. Pop the feta on top along with all the chilli juices and a few sprigs of basil. This makes a lovely sharing starter or a light lunch if you leave the orzo off. Serve with french bread to soak up those delicious chilli juices! Love & food,
