Italian Sausage Ragu

I was back on @bbcoxford tonight with @itsmeadamball and this was the recipe. I personally love it as an alternative to a bolognese and my diners all agreed, it went down a storm!⁣

This recipe was from the lovely @annasfamilykitchen who has so many wonderful one pot dishes so check her out if you love a one pot wonder 🙌⁣

To make this dish you will need...⁣

8 Cumberland Sausages⁣

1 chopped onion⁣

2 crushed garlic cloves⁣

400g passata⁣

100 mls red wine / or you can use balsamic vinegar⁣

1/2 tsp chilli flakes⁣

1 tsp fennel seeds⁣

1 tsp smoked paprika⁣

400g pasta⁣

Using a wide/deep pan, fry the onions for 5 minutes.⁣

Remove the skins on the sausages and use the meat (great hack!). Add the sausage meat to the pan and break up. ⁣

Add the garlic, fennel, chilli & smoked paprika. Fry the mixture for around 10 minutes or until the sausage is browning. Add the wine, let it bubble a bit and add the passata. ⁣

Put your pasta on to boil at this point and give the ragu another 10 minutes or so to simmer and then add the drained pasta into the ragu.⁣

Serve with a french stick and enjoy this Ragu whilst wondering if you’ll ever make a bolog again 🤷‍♀️⁣
