My Sexy Winter warmer stew

I donā€™t have a photo of this recipe unfortunately so Iā€™m afraid youā€™ll have to make do with a photo of me looking far less sweaty than I felt at Magic Kingdom last week. 33 degrees whilst walking around a theme park is not the one but it has made me appreciate and embrace the cold more now Iā€™m home šŸ„µ ā£

Ironically this recipe is my absolute favourite Winter warmer stew for when itā€™s freezing cold...ā£

ā£

Itā€™s a hearty stew in the sense that it has a lot of substance...but actually quite a light broth which I personally prefer especially when used to dunk bread in šŸ„– ā£

ā£

Itā€™s formal name is; Spanish beans, chicken & chorizo stew but for reasons I canā€™t remember Iā€˜ve always called it this ā¬‡ļøšŸ¤·ā€ā™€ļø

ā€œMy Sexy Stewā£ā€


Serves 4-6ā£

ā£

1 can of Cannellini beansā£ā£

1 diced onionā£

1 tbsp paprikaā£ā£

Sprig of thymeā£ā£

Stock ā£

4-6 boneless chicken thighsā£ā£

250g Charlotte/baby potatoes chunks ā£ā£

Piece of chorizo chopped into large chunksā£ā£

100g pack baby spinachā£

ā£

Start by giving the beans a clean by draining and soaking in water for a few minutes. Use a deep pan and add in beans, onion, paprika, thyme, potatoes and chicken. ā£

ā£

Pour over enough stock to cover, bring to the boil, then reduce the heat. Cover and simmer for 30 minsā£

- then add chorizo to the pan. ā£

ā£

Continue cooking for 15 mins until the potatoes are soft. Add spinach in for last 5 minutes of the cooking time.ā£

The flavours in this are crazy good but you have to eat it to believe it so give it a go and please let me know what you think šŸ„˜ā£
