My Sexy Winter warmer stew


I don’t have a photo of this recipe unfortunately so I’m afraid you’ll have to make do with a photo of me looking far less sweaty than I felt at Magic Kingdom last week. 33 degrees whilst walking around a theme park is not the one but it has made me appreciate and embrace the cold more now I’m home 🥵 ⁣

Ironically this recipe is my absolute favourite Winter warmer stew for when it’s freezing cold...⁣

It’s a hearty stew in the sense that it has a lot of substance...but actually quite a light broth which I personally prefer especially when used to dunk bread in 🥖 ⁣

It’s formal name is; Spanish beans, chicken & chorizo stew but for reasons I can’t remember I‘ve always called it this ⬇️🤷‍♀️

“My Sexy Stew⁣”

Serves 4-6⁣

1 can of Cannellini beans⁣⁣

1 diced onion⁣

1 tbsp paprika⁣⁣

Sprig of thyme⁣⁣

Stock ⁣

4-6 boneless chicken thighs⁣⁣

250g Charlotte/baby potatoes chunks ⁣⁣

Piece of chorizo chopped into large chunks⁣⁣

100g pack baby spinach⁣

Start by giving the beans a clean by draining and soaking in water for a few minutes. Use a deep pan and add in beans, onion, paprika, thyme, potatoes and chicken. ⁣

Pour over enough stock to cover, bring to the boil, then reduce the heat. Cover and simmer for 30 mins⁣

- then add chorizo to the pan. ⁣

Continue cooking for 15 mins until the potatoes are soft. Add spinach in for last 5 minutes of the cooking time.⁣

The flavours in this are crazy good but you have to eat it to believe it so give it a go and please let me know what you think 🥘⁣
